Classic Beef Fajitas
A classic Mexican dish with smoky flavour, made with rump steak. Serves up 10 sizzling fajitas in no time.

COOK 15 mins
INGREDIENTS
• 2 tablespoons olive oil
• 1 Fajita Spice Mix
• 700 g Tara Valley Beef Rump Steak
• 1 finely sliced large onion
• 1 thinly sliced capsicum
• 1 lime
• Fresh coriander leaves
• 2 blanched corn cobs with husks removed
• 1 Tortillas (10pk)
DIRECTIONS
1. Heat a BBQ or large pan until very hot. Mix spice blend with oil, coat beef, and cook half for 4 minutes until browned. Repeat with the rest.
2. Add onion and capsicum, cook for 1 minute, then squeeze over lime juice. Grill corn for 2 minutes.
3. Warm tortillas as directed or grill for 10 seconds.
4. Serve everything on a platter and let everyone build their own fajitas.
