OREO Cookies & Cream Cheesecake

INGREDIENTS
• 3 x 128g OREO Original Cookies packet
• 80g butter, melted
• 2 x 250 g cream cheese block, softened
• 3 x tsps. gelatine, dissolved in 1/4 cup boiling water
• 200g baking white chocolate
• 2 x cups thickened cream, divided
DIRECTIONS
1. Crush 1 pack of OREOs to make crumbs, mix with butter, and press into a 20 cm springform pan. Chill 30 mins.
2. Melt 200g white chocolate in the microwave until smooth.
3. Beat cream cheese until smooth, then mix in gelatine, white chocolate, and 1 cup cream.
4. Crush another pack of OREOs. Stir half into the cream cheese mix.
5. Pour into base and chill 3 hours or overnight.
6. Whip 1 cup cream to soft peaks, fold in remaining crushed OREOs, and pipe on top.
7. Decorate the whipped cream swirls with extra OREOs and serve.
